Hi-Country Jerky Seasonings are a unique blend of premium grade spices, salt, sugars, and cure, boldly formulated for seasoning stronger wild game meat and game birds. Our Jerky formulations emphasizeslightly higher levels of sugars, or humectants, to help retain moisture longer, making softer, mor e more pliable chewing jerky. Each kit contains one cure packet with only sodium nitrite on a smallsalt carrier so that the user can optionally omit the cure without compromising the overall seasoni ng of the jerky.
